Detox Salad

Do you ever feel like you need a diet reset? Whether that feeling comes from over-indulging over a weekend or holiday, or it’s due to a gradual diversion from your healthy eating goals, having a go-to recipe to get you back on track is key.

This salad is full of cruciferous vegetables and fibre that support the body’s detoxification pathways and aid in the removal of toxins. The apple cider vinegar in the dressing supports digestive secretions in breaking down food. Apple cider vinegar has also been linked to a lower body mass in long term studies and as part of a healthy diet. Add a protein source to this salad to further support detoxification and make it a meal!

Ingredients

For the Salad:

  • 1/4 to 1/2 head purple cabbage, finely chopped
  • 1 bunch kale, chopped into ribbons and lightly steamed
  • 1 head of broccoli, finely chopped
  • 1 beet, grated
  • 1 to 2 carrots, grated
  • 1 avocado, chopped
  • 1/2 cup parsley, finely chopped
  • 1/2 cup dried cranberries
  • 1/4 raw nuts or seeds of your choice (chop if large nuts)

For the Dressing:

  • 1/4 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • Salt and pepper, to taste

Instructions:

  1. Place all the salad ingredients in a large bowl.
  2. Place all dressing ingredients in a jar and shake to combine.
  3. Dress salad to taste. You may have left over dressing to use on other salads and dishes.
