Tropical Slice

Despite the impressive appearance of this layered dessert, it’s a super simple recipe to make.

If you’re in a rush and can’t be bothered to wait for the layers to set, combine the white and tropical layer for a quicker final product. Play around with different seasonal fruit to vary the flavour and colour!

Ingredients

Note: Pre-soaking cashews is required. 3 cups soaked cashews in total is needed

For the base:

  • 1 cup of dried apricots
  • 1/2 cup almonds
  • 1/2 cup Brazil nuts
  • 3 tablespoons coconut oil, melted
  • pinch of rock salt

For the white layer:

  • 2 cups cashews, soaked
  • 3 tablespoon’s maple syrup
  • 1 teaspoon coconut oil
  • Juice of half a lemon

For the tropical layer:

  • 1 cup cashews, soaked
  • 1 1/2 cup pineapple or mango
  • 1 teaspoon coconut oil
  • 2 tablespoons maple syrup
  • Zest of half a lemon
  • Optional: 1/8 teaspoon of turmeric, for colour

Instructions:

Place all 3 cups of cashews in a bowl and fill the bowl with enough water to just cover them. Let soak for 1 hour.

Base Layer:

  1. Line a 4 x 10 inch rectangular baking tin with baking paper.
  2. Place the almonds and brazil nuts into a food processor and blend to a fine consistency. Add the apricots and melted coconut oil and blend again. The “dough” should form a ball and stick together when handled.
  3. Push the base into the prepared tin and place into the fridge.

White Layer:

  1. Pour all the cashews and the soaking liquid into a high-speed blender and blend until very smooth.
  2. Remove 1 cup of the cashew mixture from the blender for the tropical layer.
  3. Add the remaining ingredients for the white layer. Blend until combined.
  4. Pour the mixture on top of the base. Freeze for 1 hour.

Tropical Layer:

  1. Combine reserved 1 cup cashew mixture with other tropical layer ingredients in a high speed blender. Blend until very smooth.
  2. Pour mixture on top of the white layer. Place back into the freezer for at least 2 hours or until solid.
  3. Remove from freezer and place in fridge or on the counter for 1 hour before serving to soften and make slicing easier. Remove from pan to slice. Enjoy!
  4. Store in freezer.
